Lemon Blueberry Delight

Ingredients:
For the Crust:

1 ½ cups graham cracker crumbs
½ cup butter, melted
For the Blueberry Layer:

1 cup fresh blueberries
¼ cup sugar
1 tablespoon cornstarch
¼ cup water
For the Lemon Filling:

1 cup sweetened condensed milk
½ cup lemon juice
1 tablespoon lemon zest
3 egg yolks
For the Whipped Topping:

1 cup whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Directions:
1️⃣ Prepare the Crust: Preheat the oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, then press into an 8×8-inch baking dish. Bake for 10 minutes, then let cool.

2️⃣ Make the Blueberry Layer: In a saucepan over medium heat, combine blueberries, sugar, cornstarch, and water. Cook, stirring constantly, until the mixture thickens. Pour over the cooled crust.

 Bake the Lemon Filling: In a bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth. Pour over the blueberry layer and bake for 15 minutes. Let cool, then refrigerate for at least 2 hours.

 Whip the Cream: Beat whipping cream, powdered sugar, and vanilla until stiff peaks form. Spread over the chilled dessert.
